Fresh Tomato Basil Red Lentil Penne

This Fresh Tomato Basil Red Lentil Penne is a new family favorite recipe. The tomato sauce is completely homemade using fresh, flavorful ingredients. It is served over the top of Barilla’s new legume based pasta, Red Lentil Penne. This dish is both healthy and delicious! Make it with me!



We are all seeking healthier options for ourselves and our families. There are so many “healthy” options available today, it’s difficult to know which products to try. And if you’ve tried a few of the healthier alternatives out there – chances are you’ve been let down by, poor taste and/or texture, or use several questionable ingredients (what is xanthan gum?!). Barilla has addressed this gap by introducing Legume based pasta. The new legume pastas are made from one simple ingredient (chickpeas or lentils). Plus, they have a superior taste and texture vs. similar products on the market today.

Fresh Tomato Basil Red Lentil Penne 
Yields 4 servings

1 box Barilla Red Lentil Penne 
2 cups cherry tomatoes
1/4 cup olive oil 
1/2 onion, sauteed 
2 cloves roasted garlic 
1 tablespoon italian seasoning blend
10 fresh basil leaves 
Salt & Pepper

Start by preheating the oven to 400 degrees. Wrap the garlic cloves in tin foil and roast in the oven for twenty minutes, until soft. 

Next, boil the Barilla Red Lentil Penne in salted water on the stovetop for 9 minutes. 

In a blender, add the cherry tomatoes, olive oil, sauteed onion, roasted garlic cloves, italian seasoning, fresh basil, and a dash of salt and pepper. Blend until smooth. Taste and add more salt & pepper if needed. 

Place the homemade tomato sauce in a saucepan over medium heat. Mix in the penne and cook until heated through. Serve hot.

1 box lemon cake mix- prepared according to package directions, swapping water for milk. I used the Duncan Hines Perfectly Moist Lemon Supreme cake mix.
1 Tablespoon poppyseeds
1 8-ounce container of Cool Whip topping
1 10.5-ounce container of lemon curd- I like buying the Bonne Maman Lemon Curd at Smith’s or the Trader Joe’s Lemon Curd
1 lemon, zested

2-3 corn cobs, charred or roasted
1 pound rotini noodles
2 jalapenos, diced
1 cup cilantro, diced
3 green onions, diced
3 limes, zested and juiced
1 cup cotijia cheese
1 cup sour cream
1/2 cup mayo
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon pepper

An ice bath can revitalize wilted romaine lettuce by helping it rehydrate and regain crispness. Submerging the lettuce in ice water for 15-30 minutes can be effective in reviving limp leaves. 

1. Prepare the ice bath:
Fill a large bowl with cold water and add ice cubes until the water is very cold. 
2. Submerge the lettuce:
Carefully place the wilted romaine lettuce leaves in the ice water, ensuring they are fully submerged. 
3. Soak for 15-30 minutes:
Let the lettuce soak in the ice water for about 15-30 minutes, allowing the leaves to rehydrate. 
4. Remove and dry:
After soaking, remove the lettuce from the ice water and gently pat it dry with a clean towel.

3 tablespoons avocado oil
1-1.5 lbs shaved beef or thinly sliced steak
1 Tablespoon Worcestershire sauce 
1 medium yellow onion, diced
2 cloves garlic, minced
2 cups mushrooms, roughly chopped
2 bell peppers, diced
4 slices of provolone or Swiss cheese
Kosher salt & pepper
Hoagie bread, tortillas, potatoes, or rice to serve with, optional

Sauté, season, brown, mix, top with cheese & broil. Ready so fast and so easy!!
