Lemon Pesto Red Lentil Pasta

This Lemon Pesto Red Lentil Pasta is a new healthy and delicious pasta recipe! Pasta is one of my favorite food groups, but it isn’t always the healthiest option out there. Barilla has created an awesome new product, a Legume Based Pasta! This pasta is made from one simple ingredient, Red Lentils! It is a great pasta alternative that has a great flavor and texture! Make it with me!

We are all seeking healthier options for ourselves and our families. There are so many “healthy” options available today, it’s difficult to know which products to try. And if you’ve tried a few of the healthier alternatives out there – chances are you’ve been let down by, poor taste and/or texture, or use several questionable ingredients (what is xanthan gum?!). Barilla has addressed this gap by introducing Legume based pasta. The new legume pastas are made from one simple ingredient (chickpeas or lentils). Plus, they have a superior taste and texture vs. similar products on the market today.

Lemon Pesto Red Lentil Pasta 
Yields 4 servings

1 box Barilla Red Lentil Rotini
6 ounces Barilla Traditional Basil Pesto
1/4 cup Extra Virgin Olive Oil
1 lemon, juiced
1/2 cup cherry tomatoes, halved
2 tablespoons parmesan, grated
2 tablespoons fresh basil, chopped  

Start by boiling 4 cups of water in a medium saucepan. When water reaches a rolling boil, add Barilla Red Lentil Rotini and set the timer for 8 minutes.
In a small saucepan over medium heat, add the Barilla Traditional Basil Pesto, extra virgin olive oil, and lemon juice. Heat for 2 minutes.
Next, add the cherry tomatoes to the sauce and cook for one minute. Remove from heat.
When the pasta is finished, strain the water out into the sink and place in a bowl. Pour the prepared pesto sauce over the noodles and mix.
Top with grated parmesan and basil.

WHAT YOU’LL NEED TO MAKE BAKED FRENCH TOAST CUPS

10 cups of day-old bread, cut or torn into ½ inch cubes
2 cups milk
6 eggs
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
For the Cinnamon Streusel Topping:
1/4 cup butter
1/4 cup light brown sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
For the Icing
1/3 cup powdered sugar
1 Tablespoon milk

My take on the viral nonpareils dot cake trend I’ve been seeing around! Here’s how to make them! 

2 cups old fashioned oats
12 ounces cashew butter
1/2 cup honey 
2 servings cake batter protein powder @cleansimpleeats 
1/2 teaspoon salt 
1/2 teaspoon vanilla 
1/2 teaspoon almond extract 
1 Tablespoon milk 
3 Tablespoons nonpareils sprinkles, divided 

Mix together together all the ingredients in a stand mixer. Add 1 tablespoon of sprinkles to the dough, reserving the remaining sprinkles for the topping. 

Roll the protein bites into balls, press each ball into the sprinkles to create a crunchy topping, and refrigerate until ready to serve. Enjoy!

Dinner doesn’t have to be complicated! Make this d Dinner doesn’t have to be complicated! Make this delicious mango salmon plate in 15 minutes or less!!!

What you’ll need: 
2 salmon fillets 
1 teaspoon garlic salt
1/2 teaspoon smoked paprika 
1 lemon 
Prepared Mango Salsa 
Broccoli 
Cilantro Lime Rice (microwaveable from Costco)

Season the salmon fillets with garlic salt and paprika and cook in the air fryer for 8-10 minutes at 380 degrees. 
Steam the broccoli in the microwave. 
Heat up the cilantro lime rice. 
Plate the rice & broccoli. Place cooked salmon on the rice, and top with lemon juice & mango salsa. Enjoy!!

Pasta Salad For A Crowd 💡 Head to @samsclub and Pasta Salad For A Crowd 💡 

Head to @samsclub and grab nearly everything you need for a big bowl! 

3 bell peppers
2 English cucumbers
2 cups halved cherry tomatoes 
2 cups halved pepperonis 
1 cup mozzarella pearls or cubes
2 Tablespoons fresh basil 
1/4 cup Olive Garden Dressing 
1 full package, both sides, cheese tortellini 
1/2 cup Pesto 

Slice & dice your vegetables and toss in the Olive Garden salad dressing. Cook your tortellini and toss in pesto sauce and allow it to cool. Mix it all together and store in the fridge until ready to serve!
