Fresh Cobb Salad

May 3, 2018 by Alex Daynes

Everybody loves a Fresh Cobb Salad, right? I know I do! The beauty of making a salad at home is that you can put exactly what you like into it. A traditional cobb salad is going to have hard boiled egg, bacon, and blue cheese. A cobb salad, can have whatever you want in it! Make it with me!

I am not a fan of blue cheese. There I said it. I don’t like blue cheese. So instead, I used a feta cheese in my Fresh Cobb Salad. Obviously, if you are a blue cheese fan, you can use blue cheese instead of feta. That’s the beauty of making a salad at home! Make it to fit your taste buds!

A traditional cobb salad is going to have blue cheese dressing. I, as stated before, do not like blue cheese. My favorite salad dressing is believe it or not, ranch dressing. I like a good, homemade ranch dressing though. I do not like Hidden Valley Ranch. My favorite store bought ranch is the Wild Coyote Ranch. If you need a good fool proof way to get hard boiled eggs, try cooking them in your Instant Pot! Here is my recipe for Perfect Instant Pot Hard Boiled Eggs!

I am all about people adapting my recipes to fit their personal needs. I do not think there is one way to make a great salad, or one way to make ranch dressing. I appreciate variety in all things. That is why I am leaving this recipe a little bit up to you. You can make this Fresh Cobb Salad into your perfect salad! I will give you the basics, and what I like, and you can go from there! Deal? Deal.

Fresh Cobb Salad
Yields 2-4

½ head romaine lettuce, chopped
2 cups spinach leaves
5 slices of bacon, cooked and cut into pieces
1 red bell pepper, diced
1 cucumber, peeled and diced
2-3 hard boiled eggs
1 cup shredded carrots
1 avocado
¾ cup feta cheese, crumbled
2 cups cooked chicken (optional)
Ranch Dressing

Place lettuce and spinach in a bowl and mix together.
Next, add all of the toppings and mix until incorporated.

Once everything is mixed together, plate salad into bowls.
Drizzle with ranch, serve & enjoy!

You no longer have the visual explanation 🤰 for how you’re feeling on the inside.

You may look ā€œnormalā€ again but you don’t feel yourself.

Your clothes don’t fit like they used to. The weights are lighter than normal. The workouts don’t feel like they did before.

You have to work to find yourself again.

I always say exercising after birth is much harder than exercising pregnant.

Keep showing up. Keep pushing. Keep rebuilding.

The bump may be gone and with it go the compliments from strangers telling you that you’re doing a great job. If no one has told you lately, please know that you’re doing a super great job!!
