Lunch Lady Peanut Butter Bars
The most irresistible Lunch Lady Peanut Butter Bars! Made with a thick layer of peanut butter crust, a layer of creamy peanut butter, and topped with delicious chocolate frosting!
Ingredients
- 3/4 cup sugar
- 3/4 cup brown sugar
- 3/4 cup creamy peanut butter
- 3/4 cup butter
- 2 eggs
- 1 1/2 cup flour
- 1 1/2 cup oatmeal
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 3/4 teaspoon baking soda
- 1 1/2 cup peanut butter, melted
For the Frosting
- 3 cups powdered sugar
- 1/4 cup cocoa powder
- 1/2 melted butter
- 1/4 cup milk
- 1 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
Prepare the Crust
- Preheat oven to 350°F.
- In a mixing bowl, cream together sugars, peanut butter, and butter.
- Next, beat in the eggs.
- Add the dry ingredients; flour, oatmeal, salt, vanilla, and baking soda.
- Turn mixer on low speed and mix until incorporated.
- Grease a half sheet baking sheet. Spread peanut butter crust dough into the cookie sheet.
- Bake for 10-12 minutes, or until crust is golden.
Peanut Butter Layer
- While the crust layer is hot out of the oven, spread the creamy peanut butter over the top.
- Allow crust to cool completely before adding the chocolate frosting.
Chocolate Frosting
- Beat together powdered sugar, cocoa powder, butter, milk, salt, and vanilla in a stand mixer.
- Beat on high speed until creamy and smooth.
- Spread chocolate frosting over cooled peanut butter bars. Enjoy!
