What Are Udon Noodles?
Yaki udon is a stir-fried Japanese udon noodle dish made with an assortment of vegetables and protein.
Udon is referring to the type of noodle in this dish. Udon is a thicker, Japanese noodle. You can find it at most grocery stores in the refrigerator or in the freezer section.
Udon noodles are thick, chewy wheat noodles made with wheat flour, water, and salt. However, it’s not gluten-free like the rice noodles you see in many stir-fries.
What You’ll Need to Make Stir-Fry Udon Noodles
- Udon noodles
- Onion
- Garlic
- Cabbage
- Carrot
- Green onions
- Soy Sauce
- Oyster Sauce
- Rice vinegar
- Brown Sugar
- Optional: Shrimp, chicken, or your choice of protein including thinly sliced beef, pork, or other types of seafood.

The fun thing about this recipe is that it is totally customizable! You can make it your own by adding different ingredients that you like mixed into your stir-fry.
The first option is to add protein if you like! You can make this recipe a meal itself if you want to by adding in chicken, shrimp, or beef.
Or you can keep it vegetarian and add in mushrooms or bell peppers.

Stir-Fry Udon Noodles
I love making stir-fry udon noodles as a delicious weeknight meal, or an easy side dish! These udon noodles are simple to make!
Ingredients
- 2 Tablespoons cooking oil
- 4 servings udon noodles (about 4 cups)
- 1/2 medium onion, diced
- 3 cloves garlic, minced
- 1 cup cabbage, shredded
- 1 cup purple cabbage, shredded
- 1 cup carrot, shredded
- 3 green onions chopped
For the sauce
- 3 Tablespoons soy sauce
- 3 Tablespoons oyster sauce
- 1 Tablespoon rice vinegar
- 2 Tablespoons brown sugar
- Optional: red pepper flakes
Instructions
- Prepare the udon noodles by soaking them in hot water for about a minute, and use a pair of chopsticks or a fork to carefully loosen the noodles. Rinse with cold water, drain, and set aside.
- Whisk together all the sauce ingredients and set aside.
- Heat oil in a wok and add onion, and garlic, and cook until aromatic. Add the cabbages and carrot, and continue to cook for 2-3 minutes.
- Add the udon noodles and sauce, and toss them together until the noodles are evenly coated. Add green onions and mix to combine. Garnish and enjoy!
Notes
*if adding protein, feel free to cook it in the wok first, prior to following steps 3 & 4. You can add the cooked protein at step 4.
