MEAL PREP: Island Soyaki Teriyaki Chicken Bowls

Meal Prep Monday! My most favorite day of the week! Every Sunday night I ask Brandon what he is in the mood for this week for bowls. He always tells me the same, chicken and rice. He could eat the same thing every day forever and that is admirable but I cannot. I always try to do something difference and creative to shake up the week. This weeks bowls, I used my food processor and it made a huge difference! The flavor, the texture, and the bowls were just overall a success! This will be a meal prep recipe that I will keep around!  

I have told you about my favorite purchase that I have found at Costco. It is the prepackaged and cooked Rotisserie Chicken for $11.99. I love it because it saves me so much time in my weekly meal prep. It has a great flavor and it is so easy to use! I love it because I can toss it with any sauce I want and it will take on the flavor! 
To shake up the way we usually do our vegetables, I decided to shred mine in my Cuisinart FP-8SV Elemental 8-Cup Food Processor, Silver. We used carrots and zucchini and absolutely loved it! It changes the texture and the overall flavor of the bowls. It tasted like a Rumbi rice bowl, which is one of my favorite restaurants. I did not cook the shredded vegetables before I added them to the bowl because I do not like cooked carrots. Instead, I just added them raw to the bowls. When we reheated them in the microwave, it cooked the shredded vegetables just enough to a nice tender texture, without going soggy. 
This week to enhance my chicken’s flavor, I used my favorite teriyaki sauce from Trader Joe’s. Everyone needs a good teriyaki sauce and recently I have discovered that this is my favorite one! Their description of this sauce says it best “ Far from your average teriyaki sauce, this one features fresh garlic, fresh ginger and preservative-free soy sauce as its flavor base, with a jolt of pineapple to really sweeten the pot, so to speak. In addition to the freshness of the ingredients, where this sauce veers from the everyday is in the addition of sesame seeds to the mix. The seeds add flavor and texture, setting Trader Joe’s Island Soyaki quite apart from the crowd” 

You can purchase it for $3.69 for a 20 ounce bottle! 
These bowls are extremely simple, but they do not lack in flavor! With the shredding vegetables and the delicious sauce, you cannot go wrong! Even the pickiest of eatters with love it! 
MEAL PREP: Island Soyaki Teriyaki Chicken Bowls 
2 1/2 cups Brown Rice
1 package Costco Rotisserie Chicken
2 large Zucchini 
4 large Carrots
1 cup Island Soyaki Teriyaki Sauce 
In an Instant Pot or Rice Cooker prepare Brown Rice. For Insta Pot- 1:1 ratio rice to water. 22-25 minutes on Manual pressure. Let pressure manually release when finished cooking, about 10 minutes. 
Meanwhile, add rotisserie chicken to a gallon sized zip lock bag with one cup of the Island sauce. Let it marinate while rice is cooking. 
Shred carrots and zucchini in Cusinart Food Processor. 
Assemble bowls, rice on bottom, carrots and zucchini and marinated chicken on top. 
For reheating: Place in microwave for 2 minutes. Add additional sauce if needed.

My take on the viral nonpareils dot cake trend I’ve been seeing around! Here’s how to make them! 

2 cups old fashioned oats
12 ounces cashew butter
1/2 cup honey 
2 servings cake batter protein powder @cleansimpleeats 
1/2 teaspoon salt 
1/2 teaspoon vanilla 
1/2 teaspoon almond extract 
1 Tablespoon milk 
3 Tablespoons nonpareils sprinkles, divided 

Mix together together all the ingredients in a stand mixer. Add 1 tablespoon of sprinkles to the dough, reserving the remaining sprinkles for the topping. 

Roll the protein bites into balls, press each ball into the sprinkles to create a crunchy topping, and refrigerate until ready to serve. Enjoy!

What you’ll need: 
2 salmon fillets 
1 teaspoon garlic salt
1/2 teaspoon smoked paprika 
1 lemon 
Prepared Mango Salsa 
Broccoli 
Cilantro Lime Rice (microwaveable from Costco)

Season the salmon fillets with garlic salt and paprika and cook in the air fryer for 8-10 minutes at 380 degrees. 
Steam the broccoli in the microwave. 
Heat up the cilantro lime rice. 
Plate the rice & broccoli. Place cooked salmon on the rice, and top with lemon juice & mango salsa. Enjoy!!
