PF Changs Famous Lettuce Wraps with Pop & Cook

These Lettuce Wraps are a knock off of PF Chang’s Chicken Lettuce Wraps. I love love love these lettuce wraps. These lettuce wraps are the most popular item on the PF Changs menu. It is definitely my favorite thing to eat there! That is why I decided to recreate this recipe at home! This recipe is in collaboration with Pop & Cook! You guys have seen me use Pop & Cook a number of times, and that is because it is so easy and convenient to use in the kitchen! Make it with me!

With Pop & Cook, you are now able to focus on the joy of cooking and spending time with friends and family rather than prepping and cleaning herbs and onions! There is no chopping, no mess, and no waste! And for those pesky onions, there are no more tears! I love how Pop & Cook has changed the game in the kitchen. I used to work as an intern at the Little America in Salt Lake City, and 90% of my job was to prep all the herbs, veggies, and onions! And it was always a huge pain. The inspiration for this recipe came to me when I was sitting in PF Changs. As I said above, I love lettuce wraps. Like I crave them! YUM! This is one of my new favorite recipes ever! It’s made super easy using the Pop & Cook products! These make the perfect meal, the perfect appetizer, or even the perfect party food! Finger food is so fun! So is this recipe! I even have provided you with a full video tutorial for making this recipe! Make it with me!!

PF Changs Famous Lettuce Wraps
Yields: 4 

1 tablespoon olive oil
1 pound ground chicken
2 cloves garlic 
1 white onion, diced
2 tablespoons soy sauce
1/4 cup hoisin sauce
1 tablespoon rice wine vinegar
3 cubes Pop & Cook Ginger
1 can whole water chestnuts, drained and diced
2 green onions, sliced
Salt & Pepper to taste
1 head butter lettuce
Heat olive oil in a saucepan over medium heat. Add ground chicken and cook until browned, drain extra fat. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, and Pop & Cook ginger. Stir until onions are softened. Stir in chestnuts and green onions until tender. Season with salt and pepper to taste. 
To serve: spoon a few tablespoons of the mixture into the center of the butter lettuce leaf and enjoy!

3-4 cups corn (shaved off the cob or frozen)
1 Tablespoon olive oil, for frozen corn
1/4 cup mayo
1/4 cup sour cream
1 lime, juiced
1 teaspoon chili powder
1/4 teaspoon smoked paprika
1 teaspoon garlic salt
1/4 cup diced red onion
1/2 cup chopped cilantro
1 diced jalapeno
1/4 cup crumbled cotija cheese

WHAT YOU’LL NEED TO MAKE BAKED FRENCH TOAST CUPS

10 cups of day-old bread, cut or torn into ½ inch cubes
2 cups milk
6 eggs
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
For the Cinnamon Streusel Topping:
1/4 cup butter
1/4 cup light brown sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
For the Icing
1/3 cup powdered sugar
1 Tablespoon milk

My take on the viral nonpareils dot cake trend I’ve been seeing around! Here’s how to make them! 

2 cups old fashioned oats
12 ounces cashew butter
1/2 cup honey 
2 servings cake batter protein powder @cleansimpleeats 
1/2 teaspoon salt 
1/2 teaspoon vanilla 
1/2 teaspoon almond extract 
1 Tablespoon milk 
3 Tablespoons nonpareils sprinkles, divided 

Mix together together all the ingredients in a stand mixer. Add 1 tablespoon of sprinkles to the dough, reserving the remaining sprinkles for the topping. 

Roll the protein bites into balls, press each ball into the sprinkles to create a crunchy topping, and refrigerate until ready to serve. Enjoy!

Dinner doesn’t have to be complicated! Make this d Dinner doesn’t have to be complicated! Make this delicious mango salmon plate in 15 minutes or less!!!

What you’ll need: 
2 salmon fillets 
1 teaspoon garlic salt
1/2 teaspoon smoked paprika 
1 lemon 
Prepared Mango Salsa 
Broccoli 
Cilantro Lime Rice (microwaveable from Costco)

Season the salmon fillets with garlic salt and paprika and cook in the air fryer for 8-10 minutes at 380 degrees. 
Steam the broccoli in the microwave. 
Heat up the cilantro lime rice. 
Plate the rice & broccoli. Place cooked salmon on the rice, and top with lemon juice & mango salsa. Enjoy!!
